It always comes out light and delicious. I have not yet make anything using this whole wheat flour alone.If you buy this, be sure to read the directions for its care on the package. Apparently, it should spend as little time as possible at room temperature. I transferred it all into the large square plastic jars that roasted nuts come in and stacked them in the refrigerator. It is recommended to take out what you need and put the rest back in the frige right away.
