I read some keto recipe books and started baking with stevia, erythritol and Lo Han extract, thinking that those should be better than honey or maple syrup because they are "lower in carbs". I had long been skeptical of these sweeteners but a large keto community was supporting these. So I think they should be fine and different from aspartame etc, as they are "natural". Oh, I have so wrong! Thanks Bruce Fife for this wake up call! After all, sugar was a "natural product" extracted and purified from sugar cane. And flour, rice are also "natural" from plant source. Until we found that we over-eat sugar and grains(without most of us being aware of it) that so many people fell so ill. I am thankful to Bruce Fife for this crucial information, I just wish I had known sooner. I would have been better off just using cane sugar! I have thrown out my stevia product and am slowly gaining back my sense of taste that has been so warped. When I want sweet taste I use coconut sugar or raw honey but only occasionally.
