### ⭐⭐⭐⭐⭐ High price, but an amazing product

I have always been a fan of balsamic vinegar. There is nothing quite like it on a salad with heart of palm or with a roast duck. Usually I would buy the supermarket grade of the stuff, but now and then I'd pay a bit more and try the gourmet version. There was rarely all that much difference. Then I heard about the aged balsamic vinegars, mellowed and ripened for decades, slowly evaporating, slowly changing. Of course, they didn't sell them at my supermarket or the high end food shops I'd browse now and then.Then, thanks to the internet, I discovered that it was possible to buy 25 year old, 50 year old or even 100 year old balsamic vinegars, but the prices were astounding. It was like buying a premier cru Bordeau. I mean, this stuff was vinegar, not ambergris. Then a friend of mine was having a very special birthday, and I knew she liked things like this, so I broke down and bought her a bottle. I figured I'd go whole hog and get the 100 year old version. Well, it was a great birthday present. We both loved it. We each had a few drops, straight and with a bit of parmesan cheese. It was astounding. The flavor was rich, deep, and strong. It was definitely balsamic vinegar, but the bite had vanished. It was all the rest of the taste, but concentrated and intensified.Don't buy this to dump on a salad. This is too good for that, and it doesn't have that vinegar bite you'd want to balance the salad oil. Buy this for special occasions. It's amazing straight, to be honest. It's amazing with parmesan. It might do well with many types of cheese. Use it sparingly. It is strong. It's a small bottle, but a teaspoon full goes a long way. If you enjoy your food and you enjoy exploring new tastes, this is definitely something you would want to try.

I buy this a subscription and combine enough items to get the 15% off. It's a tiny container, a total indulgence and it's absolutely delicious. I keep it well hidden in the pantry so it doesn't get accidentally used by friends or guests as regular vinegar.I use it sparingly and only in a way that the taste isn't diluted by other flavors - for example, drizzle over a grilled steak; amazing as a few drops on vanilla ice cream; or mix a small amount with some great quality extra virgin olive oil, a few sea salt flakes, and dip warm crusty bread in it (prob my fave!). A little goes a long way!
