I adopted a sugar-free diet some time ago, but she did not. Thankfully she is open to sugar-free alternatives I keep around the house.The preparation of the cake was as simple as can be and it rose quite well. Like any cake, the fluffiness of it depends heavily on how well beaten the batter is. The frosting spread easily (let the cake cool properly or else it'll peel when frosting) and was ALMOST too sweet but still very tasty. Shockingly good consistency for a sugar-free alternative.It was a full sized cake, so we had plenty of leftovers for two people. They kept well in the refrigerator and were just as tasty a few days (when stored covered/sealed) as they were the first day.A couple hours after the first serving, we discovered a fun side-effect of this magnificent creation.**FART**"Was that you? ... OH GOD."This cake has the amazing bonus of being one of the best creators of natural gas on the planet. It was astonishing how many pants-warming flappy trumpets sounded off in the week we had nibbling on this cake. It didn't cause any real discomfort except that which naturally occurs in a San Francisco sized apartment when it is forbidden to open windows. They would sound off at any time of night- sometimes loud enough to wake us both. The cats, for the first time, slept in other rooms. They usually don't mind farts, but even they have limits.She called me her "tooty cutie" and I called her my "gassy lassie." She and I brainstormed on inventions inspired by this holy experience from green energy to air filtering underpants to self defense against street crime. We now have an imaginary duck in our apartment named Homer and blame him for all the noise.Sadly both our birthdays are done until next summer, so it may be too long before we experience such joy again.
