I made a meringue with this stuff and it worked nicely. It would also work as a glaze, but like the others said the powder can be lumpy when liquid is added. **Q: will this work for royal icing? any one have a recipe using the dried whites?** A: It will work. The quantities are on the package: 4 teaspoons dried egg white powder, 1/4 cup warm water, 1/4 teaspoon cream of tartar, and 3 cups powdered sugar. (Beat everything but the sugar until stiff peaks form, then add the sugar one cup at a time mixing on medium until combined.) You can search the web for royal icing and dried egg white powder to find other recipes. Note that dried egg white powder is different than meringue powder, because meringue powder (unlike this product) contains sugar, so don't substitute this for meringue powder, which you'll see in many recipes. **Q: Can this be beaten into a peak?** A: Yes.
