## Description

Our Acadian Light Buckwheat Flour is not a premix. Milled from buckwheat grown on the Bouchard Family Farm. This variety of buckwheat yields a flour much lighter in color and texture than other varieties. Use this nutty-flavored flour in any recipe that calls for buckwheat flour. Facts about Buckwheat: But first, a bit of history. The buckwheat grown in Aroostook county Maine has tiny white flowers and is known as silver hulled buckwheat. This variety is grown exclusively in the northern part of Maine and parts of Canada. The farmers grew and milled buckwheat for their own consumption and the middlings or bran were used for livestock feed. They also used the hulls to insulate their homes. The buckwheat plant is extremely hardy and resilient, which makes it easy to grow without the use of chemicals. The short growing season here in the St. John Valley is perfect for the 10-12 weeks required to produce the buckwheat seed. The word buckwheat actually comes from a Dutch word meaning beech wheat and refers to the fruit of the buckwheat, which resembles a tiny beech nut. Buckwheat is not a grain but an herb or fruit closely related to wild rhubarb, making buckwheat flour Gluten-Free. Cross contaminations is highly improbable because there is no rye, wheat, or barely grown on the farm. Our mill is used strictly to mill our own buckwheat. Buckwheat is high in complex carbohydrates, potassium, phosphorous, iron, calcium, protein, and fiber. It contains twice the amount of B vitamins as wheat flour.

Review: Good no grit gluten free flour - Yum yum, I am on a new gluten-free diet and I love this stuff!!! I had no idea that there was a such thing as a light buckwheat flour. I have been using the Bob's buckwheat flour for the past six months. I bought, "Against the Grain" cookbook, and this flour is in most of the recipes. The flour works well with most recipes. Some recipes, such as the pizza crusts and slightly leaven breads...additional tapioca starch and baking flour are needed. However, that has nothing to do with the flour, just my inexperience with gluten-free baking. The flour has a very neutral flavor and no grit. I can have waffles again!!!!!!! Yeaaaaaa, thank you GOD!!! There is nothing worse that a gritty, heavy, gluten-free waffle. Now, if only I can make a gluten-free biscuit that tastes as good as the original!

But certainly not a deterrent in my book to use this fabulous product - you just need to be aware this can happen. **Q: Can this buckwheat flour be used for cookies, muffins etc. and does it have to be mixed with other flours for the recipe to work?**
A: Buckwheat can be used for baking coffee cake, buttermilk pancakes, chocolate cake, cookies, etc. without mixing with other flours. Here is the recipe for Peanut Butter Cookies3 cups Acadian Light Buckwheat Flour2 tsp. baking powder1 tsp. salt1 cup (2 sticks) unsalted butter softened1 cup creamy or chunky peanut butter2 tsp. vanilla1 cup packed brown sugar1 cup sugar2 large eggsPreheat oven to 350 degrees. Combine buckwheat flour, baking powder and salt. In a large bowl, beat butter, peanut butter and vanilla until well blended. Add both sugars and beat. Combine half the dry ingredients, add the eggs, one at a time, beat in the remaining dry ingredients. Roll cookies into 1 1/2 inch balls and set 2 1/2 inches apart on cookie sheet. Press tops with the back of a fork. Bake approximately 15 minutes or until lightly brown. Makes 3 dozen.

**Q: This is not listed as organic do the growers use glyphosphate or other herbicides or pesticides to produce the buckwheat?**
A: Their website states that buckwheat is very resistant to disease and so makes it "easy to grow without chemicals". Hope this helps.

**Q: I want to use it for Soba Noodles, which requires a very fine, clean buckwheat flour with no husks or hulls: fine and clean.  Is this like that?**
A: I used this flour to make noodles today. When mixed with some salt, egg, and water they made a good linguine but my pasta maker couldn’t extrude fine noodles like spaghetti, or even thick ones — like soba — well. The result was that they were rather dry and brittle. After boiling for 2-3 minutes the linguine style ones were nice and chewy and had a nice, kind of nutty/wheat-y whole grain flavor. However they were not brown, which is what I was expecting.

**Q: What is the list of ingredients for this product? Does it contain wheat flour?**
A: This particular listing is just plain buckwheat flour. It's grown in isolated fields and processed on dedicated equipment. Check out their website for more information about this gluten free product.

Side note: Last I'd heard, Bouchard Farms also sells a ploye mix which contains wheat flour, salt, etc added to the buckwheat, if that's what you're looking for. This one is obviously not gluten free, haha.

I have been using the Bob's buckwheat flour for the past six months. I bought, "Against the Grain" cookbook, and this flour is in most of the recipes. The flour works well with most recipes. Gluten free buckwheat flour hard to come by because of cross contamination. I highly recommend this product - great flour, great family owned company - made in America. The only other comment would be to be careful when using - the nutrient rich flour turns a golden color that can stain counters and clothing when it gets wet. But certainly not a deterrent in my book to use this fabulous product - you just need to be aware this can happen. I'm really happy I've found a reliable source for a superior quality buckwheat flour that tastes great!
