Raw milk is commonly used to make cheese, but since raw milk can't be sold in packaged form(atleast in my state) I settled for pasteurized. Works fairly well, and I haven't had any troubles yet. It's a bit more difficult to find though, do be wary that if you aren't willing to look for pasteurized milks, this may not work, since ultra pastureurized is heated to temperatures that change the milks ability to form curds.
