It also says the pans are good to 530 degrees where this one only says 400 degrees. Steel is OK with it, but try not to scratch. Plastic gives off toxins from heat --or so I think, so I tend not to use it. Cookies are usually made on a cookie sheet--maybe the high sides of this pan are not appropriate for cookie making. If you have no other pan, try it.
