Review: Great pan - This pan is exactly what I needed and does what it is supposed to. It heats up quickly and the nonstick coating works really well. Review: Best Tamagoyaki pan I have found . . . - I have been looking for a good Tamagoyaki pan for a while. Unfortunately, there are a lot of poorly made Tamagoyaki pans on the market. The Techef Tamagoyaki pan is the best I have found for home use. The pan is surprisingly heavy for aluminum, which is a good thing in cookware. The cooking surface is perfectly flat. The thick non-stick coating should last for years, if not subjected to high heat. The handle is well insulated. I was a little apprehensive the first time making a rolled egg in this pan because I was using JustEgg, an egg substitute made from mung beans. Beans are primarily starch which tend to stick to pans more than proteins. The pan performed flawlessly. The rolled egg was perfect! My rolled eggs have improved substantially with this pan. The best rolled eggs I have ever made. I am very pleased with the Techef Tamagoyaki Pan. P.S. The Vovoly spatula is Perfect accessory for rolling the Japanese omelettes. **Q: Does this pan work on induction cooktops?**
A: yes.  I have both the medium and large pans. I have an induction cooktop (thermador freedom series) and it does work on my cooktop.

**Q: What is the capacity or volume of this pan? Would it hold and fold about a cup of egg whites/egg and a half cup of wilted greens?**
A: This particular (small) size tamagoyaki pan would not hold that volume of egg. Since you want only a very thin layer of egg cooking at one time for best results, this pan would probably only be good for less than half that amount. Especially if you want to add greens to it. I recommend you get the large capacity tamagoyaki pan if you prefer large volume egg dishes rolled with filling. I promise you will really like your finished egg dish! I hope this was helpful to you. **Q: is this plan completely flat on the bottom? I need no curve at all.**
A: There is 5" x 6" of the bottom of the pan I'd say is pretty darn 'flat'. Then it turns up into a pretty tight angles (not quite 90°) to the top. Pretty sturdy pan, I must say also.

This pan is exactly what I needed and does what it is supposed to. It heats up quickly and the nonstick coating works really well. ### ⭐⭐⭐⭐⭐ BEAUTIFUL HEAVY DUTY OMELETTE PAN

This is a well-built, solid and beautiful pan. I love the color and the triple coated interior lets my omelets slide out of the pan without any effort. I am so impressed with this pan that I plan on buying more of their products. It is made of Extra-heavy Gauge Aluminum with Stainless Steel Base, and the handle stays cool to the touch. Super easy to clean and scratch resistant to my metal spatula.
