It's very expensive for small farms to get USDA certified. I attended a chicken raising seminar recently (all the rage for us semi-urban farmers). They showed us everything about how they're raised. We saw the chickens -- at least 10 varieties of hens and roosters -- with free access to outside pens, tons of room for them to roam around and flap their wings. Excellent eggs and excellent chickens for eating. In the midst of the presentation they said they will not get a USDA cerfication because it costs $1500 per inspection, the inspection has to occur 4 times a year, and if you should ever fail an inspection it will be 3 years before they even let you try again to be certified. I'd rather just know who I'm buying from and get a better price without the certification. I know that's not always an option. **Q: Must you refrigerate after opening?** A: After opening a jar, you can store in your kitchen cabinet (away from light, not on the counter) for up to 3 months. After that you can refrigerate it for up to a year. Ghee will become hard in the refrigerator. However, it will become soft again once you take it out of the refrigerator and leave it at room temperature for some time. **Q: Is this product usda or fda approved? if not how do i know what's in it is correct?** A: This ghee is made in a state inspected and USDA certified facility. It contains clarified unsalted butter (ghee) and nothing else. **Q: Are the cows 100% grass-fed?** A: So... no. Disappointing that companies can put "Grass Fed" in the title of the product. Using this logic the cows could have a diet of 1% grass and 99% grain the product would be still be called Grass Fed Ghee... I think everyone is clear on the fact that people who are looking for grass fed beef and dairy do so due to the negative effect that grains have on the fat the cows produce and that we then ingest, so to use cutesy logic in declaring this to be Grass Fed Ghee is disingenuous at best... And if someone asks if it comes from 100% Grass Fed cows don't start talking like a politician. Answer the question in the most direct manner possible. "No" and then make excuses after that.
