Magefesa actually used to recommend this for pressure frying and included a recipe for pressure fried chicken with the instruction manual. Silicone gasket will NOT melt. They more than likely do not recommend pressure frying anymore because people don’t pay attention and you must not be distracted by cell phone etc when using. Like others have said. Use common sense and don’t take advise from those who have never done it. I have well over a thousand times. I have the 6 and the 8 quart. I love my 6 quart for 4 pieces (2 people) and 8 quart for 6 pieces. Best of luck this is a superior product. All magefesa products are fine quality. **Q: How do you get a seal on this thing? No matter how tight I tighten it, it leaks steam from the sides** A: You have to turn the triangle shaped handle on top as hard as you can. It has to be very tight or it leaks. Also, there should be a clear rubber gasket in the lid. All the steam should shoot out of the pressure valve. It took us a few tries before we got the hang of it. **Q: Is the bottom of the 12 quart the same as the 10 quart?** A: Similar **Q: How do you know when the cooker has come up to pressure?** A: Good morning, As soon as you see steam coming from your pressure cooker, that is the when you know that the pressure cooker has built presurre, and is ready. When you see steam coming, you put the fire down, that will keep the liquid inside and your food tasty. Good luck. ### ⭐⭐⭐⭐ Needs to be tightened all the way, then works great *by H***G on April 25, 2026* The first times I used it, I did not tighten the knob hard enough, steam escaped and the pressure did not build up. Later on, I figured out that the knob has to be turned tight all the way, and it worked fine ever since then. It requires some force that I hope I will still have when I am 80.
