I have been a fan of Buffalo Bison Meat from visiting the Original Buffalo Bills Saloon Many Years Ago. Along with Montana Tedd's Restaurants.First bought the Flat Iron Steaks for my Parents. 80 years old. Mom who holds nothing back nowadays said she loved them.Bought these for myself. AWESOME BUYPractically no fat anywhere except for a gristle grain.Cook on very Low Heat. 150 to 200 at the max over and over until you can slice thru and see the tenderness you like. FYI if you plan on cooking all and using other like I did for a meat into into a great salad, slice up a Cut very thin at rare to barely medium. Put in container along with BUTTER or some Oil you prefer. At work put those slices into a bowl with butter or oil or choosing put in microwave or toaster for long enough to heat through. Add on salad or eat as side dish.

Moist and Juicy Steak
Always like Bison Meat vs Beef. The Meat is So-o-o Tender and Juicy, and very healthy, especially when it is grass fed. It digests better than Beef, too, especially for an elderly person like me. I like the Bison Burgers, too.
