The oil is low in acidity, but very high in nutrients and healthy components, including heart-healthy polyphenols and high-density lipoproteins—good fats. (2) The Ancient Trees & Olive Varieties: 
Olive trees are known for their longevity and uniqueness—each tree has its own shapes, twists, and character. Many olive trees in the Sparta region are over 500 years old, with several over 700 years old. Our family has farmed these same trees and fields going back at least twelve generations. While the majority of our olive trees are of the famed Koroneiki variety, there are many other varieties present. The diversity of the olives results in an extra virgin olive oil that is complex and flavorful. (3) Unfiltered and Authentic Olive Oil:
 Spartan Oil is not filtered at our production facility, nor is it filtered during the bottling process. This is my SECOND purchase from Spartan oil.  I LOVE THIS OLIVE OIL!  Hands down the best EVOO I've ever tasted.  I gave a little bit of it to one of my college professors, who thought it was fantastic.  I would like to issue one caveat about the refill pack:  Unless you are a surgeon or have extraordinarily steady hands, use a funnel.  I did not spill much of the oil, but I hate losing a drop of this stuff.  I just used it in place of body butter after my shower.  DELICIOUS OIL!

Great idea for less waste. Pours just fine into a small funnel into the stoneware bottle. If you don't use all of it right away, the cap goes back on, and the olive oil does not leak out--I sat the pouch upright though.
