Then I read an article about the benefits of refined olive oil, where the fruit has been removed. I tried it and am absolutely sold. It is a neutral oil, but it has a great texture, and is much healthier than many other oils, even in this refined state. It is my new all purpose oil. It is great for sauteeing, and almost as good as butter in baking (it doesn't brown, if that is what you are going for). And it is great in salad dressings if you don't want an assertive olive taste (raspberry and honey dressing, for example). This is the style of olive oil (different brands, obviously) that we see everyone buying in Italy. EVOO has an important place Italian cuisine, but it is a finishing oil, not used for everything. I am not sure where we got the idea that the ONLY olive oil is EVOO.
