What it says on the front of the tin, is Intensity 02 which is unrelated to acidity. I know chemistry. **Q: Is it a good idea to buy large quantities at a time > 1 litre because of rancidity over time?** A: I use this olive oil all the time in cooking and salad dressings. Even so, a tin lasts around 4/5 months during which time the quality doesn’t suffer at all. Hope this helps **Q: It says "acidity is very low" but how low. Not a spacecraft. Not a medical breakthrough. Olive oil. Yet here we are. This bottle arrived with all the understated confidence of a product that knows exactly what it is. It doesn't have Bluetooth. It doesn't connect to Wi-Fi. There is no companion app demanding a firmware update before I can drizzle it onto a salad. It simply pours out of the can and tastes excellent, as olive oil has apparently been doing successfully for several thousand years. The flavour is rich, smooth and pleasantly peppery, elevating bread, salads and roasted vegetables with an efficiency usually associated with elite military units. I briefly considered awarding four stars because the oil failed to provide life coaching, solve my mortgage, or explain why my lawnmower only starts when observed by a neighbour. However, withholding a star for features never advertised felt unreasonable. So five stars it is. If future archaeologists discover this review buried beneath the ruins of our civilisation, know this: the olive oil was good. Remarkably good. Good enough that someone voluntarily logged into Amazon to tell strangers about it. And frankly, that's about as high a compliment as modern society can offer and will be on my epitaph long after I am gone...
