It has a nice earthy and mushroom flavor to it. The product comes from Italy and is organic. I wish it would list on the bottle what's in it. We tried to find an oil without aroma flavor but that is hard to find. It is quite daunting to use because you don't want to overdo it with the oil, but you don't want to miss out on the flavor by being scared. It took a few times and different dishes to figure out how to use this particular oil and what it works on.The color is very vibrant, so if it were drizzled over a colorful dish/salad, it does pop a tiny bit. Quite nice if you're trying to be fancy/impress someone. It isn't thick at all, especially for us. So do pour slowly because it can easily become a pool over your food. The flavor is nice, and buttery with a hint of olive oil. It would be great to add some depth to an aioli or for dipping bread.
