Once thoroughly warmed up the cooking surface maintains a fairly consistent temperature over the majority of the surface area. There are "cooler" spots on the far edges of the corners. 5. Once the thermostat has cycled a few times, and the griddle is adequately warmed up, the thermostat does a decent job of maintaining the temperature within about 10 degrees F of the set point. **NOTE** all temperature monitoring was done on an empty griddle surface, with no food cooking. 6. The price of this griddle is higher than some competitive offerings. The center of the flat surface, ignoring the raised edges, is about 14.75 x 18.5 inches. This tapers to about 14 x 16.5 at the edges. I would estimate about 260 square inches of flat cooking surface. **Q: Does this griddle cook evenly?** A: No. I've used three of these and they all heat the same. The heating element seems to go in a loop around the griddle. When filling the griddle with pancakes, the center is always the coolest, the side near the drain is the next coolest area, and the rest is fairly even as it follows the path of the heating element. I pour the center pancake first, remove it last, and it is still the least cooked of the group.
