Review: Sharpens well and quickly. - I bought this because of the ability to change the sharpening angle and because of good reviews. I'm of the school that says a dull knife is a dangerous one. My wife is not as attuned to this as I am. When it arrived I immediately started using it and sharpened all the kitchen knives - and warned my wife that I had done so. I'm very pleased with the sharpening job on all the knives that had undamaged edges. Let's just say that the smaller (paring) knives that are used a lot are often washed in the dishwasher, which will destroy the edge over time. Those damaged knives were the only ones that this sharpener couldn't do much for. The only way I can improve them much is to go to the garage and break out the old oilstones for a long sharpening project. The undamaged knives sharpened quickly, and I'm very pleased with the edge resulting! We have a coupe of other old kitchen sharpeners, but this one is superior. For the price I think it's a nice value, and very effective.
