You're buying cocoa butter as opposed to hydrogenated oils. Don't make my mistake and buy "chocolate coating." If you see the words "no tempering required," avoid it. Cocoa fat has different properties than seed oils and requires tempering. Couverture means "covering," like the coating on a piece in a box of expensive chocolates. I've bought this several times to make candy. I take the time to properly temper it and have had excellent results.
