Review: Perfect Size for My Pizzelle Cannoli Shells - A few years ago, I decided to use my Pizzelle maker to make my shells. Cannoli shells were the only thing I ever deep fried, and I really hate that process. Plus, rolling out dough has been getting more difficult as I've grown older. I was really surprised how much everyone liked the the pizzelle cannoli shells, in fact, they stayed crispy longer, after filling. I can't use the family recipe for the shells, so my 95-year-old mom wasn't happy. Fortunately, everyone else liked them better. These smaller-sized tubes work much better for the pizzelles, because the regular-sized tubes were too big for the pizzelles to stay wrapped around them.. It turns out that everyone preferred the smaller size, too. The shell-to-filling ratio was better. I didn't have to grease the tubes for the shells to slip right off. The number of six was perfect, giving the tubes time to cool off, between uses. I highly recommend these cannoli shell tubes! It's no longer a chore! I measured the exterior approx. 4"x 5/8". The metal is thin approx. .1cm thick. **Q: How long each form is? It is confusing because there are three dimentions in the description** A: I have the regular and the mini ones..... the mini ones are 4"L x .6W". Which means it is a little over 1/2 inch around and 4 inches long. You cut circles of dough 2-1/2 inches to wrap around them to form a cannoli. xo **Q: Do these float or sink in the oil when frying the shells?** A: I don't use a deep fryer so they do sit on the bottom of the pan. I do it this way, seam side down 1st, to prevent them from splitting open. Half way through I remove the form with tongs to complete frying. **Q: Can these forms be used at temperatures higher than for frying, such as in the oven with phyllo pastry?** A: In my opinion yes I would think so. I have tried them with a little Pam as well as without any grease. The shells come off easily with a slight twist without the need for Pam. Cleaning by hand was a breeze.
