Waiting longer to harvest produces larger yuca, and therefore more flour for your money, but you won't necessarily have consistent results in your final product. The process of drying the yuca also plays a huge roll in the final cost. Many Cassava Flours are sun dried for days, which is definitely cost effective, but leaves opportunity for mold growth.
