Use bakers joy or grease and flour the pan. Also, let the cake cool at least 10-15 minutes before trying to remove from the pan. Chefs Corner Store **Q: The recipe** A: Hi I used 2 different recipes, Italian Limoncello Savarin from a dec 1999 issue of La Cucina Italiana, and Dean Brettschneider's Fresh Ginger and Honey Nut Loaf from his Taste book. the fresh ginger loaf was very easy but the Savarin was very lemony and delicious. The ginger houses looked awesome with icing sugar dusted over them as the roof tiles picked up the sugar and looked awesome. I sat them all on a bed of whipped cream with home made lemon curd folded through it so it looked like a field of snow... Great fun and simply divine to eat! **Q: I would like to make gift boxes for these mini gingerbread houses, can you give me approximate dimensions of how big theses houses are?** A: I love this pan because the houses are so cute. The measurements are 3 1/2" x 3 1/2". If you make a box about 4" wide and high, that should work well since you might want to decorate the houses and that would add a bit more height and width to the finished product. **Q: do you have a recipe for the cozy village cake** A: "Betty Crocker Gingerbread Cake & Cookie Mix" - 14.5 oz - 2 pk (sold by Amazon) is the perfect cake mix for this pan. One box exactly fits this pan. I use butter to grease each house, and use a pastry brush to get the butter into every house detail. Mix the gingerbread cake mix in a pour spout container (like "OXO Good Grips Batter Bowl" also sold on Amazon) , and just pour the mixture into each house. Bake for 22 to 27 minutes at 350 degrees, use a toothpick to see if the houses are completely baked. Let the pan cool for 10-15 minutes, then use a serrated knife to remove the extra cake above the house (and of course - taste it to make sure it has excellent flavor). Flip the pan onto a cooling rack. After 30 minutes the houses are ready for frosting, candy decorations and alot of fun.
