Review: I was in need of a good serrated edge knife but also wanted to get an offset handle and the Mbercer Culinary knives kept coming up in my searches. I can't sing the praises enough about using an offset handle especially after having one of those "As seen on TV" Ginsu knives that I used for years. :) This one is SO much better. I love the grippy handle. It feels solid and stable in my hand, and I can make fairly precise cuts through vegetables and meats. But where this knife shines is in making thin cuts through crusty bread. I'm an amateur artisan bread maker and having a knife that easily cuts through crusty bread is essential. And at the price point it's at, I won't feel bad if it gets damaged. I'll just get a new one, though it feels well-built and sturdy enough to last for quite awhile. And as long as I maintain the blade (I have the correct sharpening tools), I do see having to another one anytime soon. Review: Sharp light knife for cutting and trimming meats. Especially this one, as it is a rather lower end cost one. I wanted to sharpen my own a while back and company quoted me like $25 to do it. It's a very labor intensive process with having to sharpen each itty bitty groove. that's why I have a new one now :) HTH **Q: How is this different from the Genesis series blade?** A: These are bare bones blades meant to get beat up doing rugged tasks like boning and quartering animal carcasses. When you need a knife that you can rely on working on a line this is the type you want to grab. When you're looking for fine cuts and sophistication you'll want a higher quality blade like the genesis. If you notice, the taper on these commercial blades is a bit sharper; they do this to save money because they don't have to feather all the way back to the spine. It makes the blade look cheap but that's part of what ultimately makes these knives invaluable in commercial kitchens. **Q: Is it made in China?** A: So china right **Q: Would this cut a coconut?** A: The 3" paring knife, not in my opinion. Though I like the paring knife and use it often, I had difficulty cutting raw cabbage with it. It's not sturdy enough for cutting a head of cabbage.
