Recommend using the additional screens due to smaller grains able to get through the larger holes as I found out with 1st use. Doing this makes it easier to clean and restart next batch as container with keifer enclosed & on attached string, basket type enclosure.Glass container, I use the solid lid on bottom to protect the glass & easy to keep up with.
