Be warned, though, these are extremely sharp as I cut my finger while de-boning and didn't notice for several seconds.

These are some very sharp knives and make quick work of de-boning and trimming a brisket, pork butt, or other meat. The slice knife gives a smooth, clean cut yielding a nicely portioned piece of brisket. Very nice set for occasional use for the weekend BBQ person. Fast delivery, well packaged and as described. Two items were not really overly sharp and disappeared that there was not a real cover for the blades but a light cardboard coves.
