Review: I love Ethiopian food, and niter-kibeh (Ethiopian spiced clarified butter) is a central ingredient to many dishes. While this company has a pre-made version ready for purchase, you may find yourself wanting more because it's so delicious. I know I did and this dried spice is essential to making your own niter-kibeh at home! (Just note that you need to grab the Manteria seasoning from Brundo as well!) It's also works well as a spice to put in dry rubs. The scent and flavor is like a minty sage that refreshes the nose and palate. (You could probably even use it as a potpourri, it makes my kitchen smells wonderful when I open the bag.) The package is resealable, for your convenience. As I said, you need this herb AND the Manteria seasoning from Brundo to make your own niter-kibeh. So make sure to order some of that too! Here is the recipe for Niter-Kibeh from Brundo's own website: 1 cup of sweet, unsalted or raw clarified butter (high heat oil to make it vegan) 1 tablespoon of dry Koseret leaves 1 teaspoon of Manteria STEPS Melt butter over low heat in a small saucepan until it begins to foam. If you are using oil, bring to a simmer with only a few bubbles coming up. Add in the Kosseret and stir gently, then add in the Manteria. Cook for 20 minutes over very low heat, stirring frequently so as not to burn the butter. Remove from heat and cover; let stand for 1 hour. Strain with a cheesecloth or fine strainer, and use as desired! This recipe yields 1 cup of Niter Kibbeh | Cooking Time: 1 hour, 30 minutes Once your kibbeh cools, it's shelf stable.

**Q: For 1 lb of butter, and using your Kibbe Manteria blend, how much Kosseret do you add?**
A: 2 Tablespoons of Kosseret and 2 teaspoons of Manteria- can add more Manteria if you want more flavor/spice to it.

**Q: Is this real kosseret?  How can I make sure I am not buying ”kesye”?**
A: It is the real deal! Imported from our plant in Modjo Ethiopia. If it is not to your liking- let us know and we will immediately refund you :)

**Q: You said '2 tablespoons of kosseret and 2 teaspoons of manteria' for 1lb of butter. is that correct and for niter kibbeh?**
A: I use 1 tbsp of kosseret, I tbsp of besobela, plus the usual spices for niter kebba. I don't use manteria because it already contains kosseret and besobela and I prefer making and balancing my own mixture.

**Q: What do you call kosseret in  English ?**
A: Yes- it is Lippia abyssinica

Nice, fragrant dry leaves. Seems like good quality to me. Tastes like it's in the mint family but subtle and unique. Enhanced my kitfo dish. Would buy again.
