Before I was putting the sushi rice in a mixing bowl, adding the sushi vinegar and then emptying it onto a wooden cutting board and draping it with a towel on top to cool. Now it’s one step. Does a great job. Great quality of wood and workmanship. The sushi rice was perfect! Very happy with it!
