Solved my issue, been in a tropical year round climate hot n humid, came back to USA in Nebraska where its fall and the yeast I bought locally just doesn't rise for hours n hours in colder temps, can't imagine full winter. My sour dough was half the height. Changed to more protein flour in the mix, plus this yeast, and in 1 hour it was already looking ready to do final proofing (shocked), was expecting 3 hours. Tonight my bread came out looking great, and taste is awesome. And, bread is airy and crunchy crust, perfecto.

**Q: Is this non gmo?**
A: I don't know! Sorry ........this yeast is very fresh and active, I would buy it again!

**Q: Are the packages nitrogen-flushed?**
A: Doesn’t appear to be and there’s nothing on the packaging to indicate that it is.

**Q: Is the sorbitan monostearate and Ascorbic acid corn derived ?**
A: I am not the manufacturer, but my son and I are both allergic to corn. We don't have any reactions or other issues when using and eating this product.

**Q: What is the shelf life of this product?**
A: You have a shelf life of a couple years. But if you have the yeast in less than ideal conditions then the shelf life may be less. Any time you want to test to see if the yeast is still good, then take some warm water, stir in a teaspoon of honey and sprinkle the yeast on top of the water and let it bloom. If it bubbles up in 5 minutes, your yeast is good.

This is great product!!
