Review: I used to make seitan for my vegetarian daughter using this - And I would make it again, but her long-time boyfriend got good at it and he is the cook in their family so...I learned another "trick" with this product and use it regularly. I used to always make bread from scratch and love home made bread, but I got a bread maker and LOVE using it! The thing I found with making bread in a bread machine is that the bread doesn't rise up quite like my own hand kneaded breads...until I read a suggestion that adding a tablespoon of vital wheat gluten to each cup of flour used will assist the bread to rise and be lighter in the finished product when I pull the loaf from my bread machine. I was blown away the first time I used vital wheat gluten as suggested in my machine made bread - it WORKS!!! Not just a little bit, it makes really nice loaves of bread that have good texture and are quite tooth-some (meaning easy to bite into and chew). Now, even with this product in my machine bread, they aren't the puffed full of air loaves of bread on every grocery store shelf - just want people to be aware, this vital wheat gluten works well to "lighten up" machine bread and that works for me! As soon as I open the package I do store it in the fridge to prolong the freshness of the product (and its flavor in my bread). For the size of the package and the price, this is a good deal for seitan or bread!

A: Yes, product is non-gmo.

**Q: How is there no fiber in this vital wheat gluten so the net carbs are lower?**
A: Because vital wheat gluten is just naturally low carb.  Its just the gluten.  Its like "water".  It doesn't have carbs to begin with.  It doesn't need a filler fiber to lower it's carbs.  the down side is your own personal sensitivity.  I wouldn't (and don't) eat it on a daily basis.  Normally I made a loaf or crust for one or two meals, then maybe do the same thing again, in 2 weeks.

**Q: How much wheat gluten for a one pound whole grain bread loaf? I bake bread in a well seasoned cast iron loaf pan in a regular oven. Thanks.**
A: The package says to use 1/2 T for every C of flour. My usual loaf of bread calls for about 3 C of flour, so I use 1 1/2 tablespoons per loaf.

I read that if you add wheat gluten to all-purpose flour and that is equivalent to bread flour. So I bought this to try it. It works. I'm very pleased. My breads which I bake a couple times a week, have a significant rise compared to straight all-purpose flour. So now I continue to purchase my 25 lb bags of flour at Costco ($8) and add the tablespoon of whey to each batch of bread I make. Stepped at my game at a significant cost savings from purchasing straight bread flour.
