The first stroke it kind of skids a little unlike a knife with pointy serrations. But, wait for the second stroke, and it slices the loaf like butter. There are hardly any crumbs produced. I can cut a super thin slice with this thing. I love the 10" - the knife is always in contact with the bread. I was initially going to buy a more expensive Japanese bread knife but the reviews on this one were so good (and price) that I thought why not. And now I realize, all I need is this Mercer Millennia. Review: This knife is excellent for cutting soft and hard loaves of bread, both regular breads and dessert breads like banana bread. Works on many non-bread items as well. It is hard to believe this quality for such a relatively low priced knife. My only concern with this and all bread knives is that after multiple sharpenings, the "wavy" part, which makes them so effective as bread knives wears down. Of course at the price, I can just replace it.
