Owning the 10" Fibrox, the knife is not too large, if anything it's about perfect and would due the same tasks a 8" chefs knife can, but also provides longer blade for more smooth cuts to larger food items, like slicing steaks, roasts, etc. I'm 5'7" male, to put the knife-person ratio into context.

No, about 3/4's of the way. With this handle type, full tang is not important.

what angle is the blade for sharpening? 15 degrees or 20 degrees?

From what I could roughly measure (caliper and trigonometry), the original edge relief ("back bevel") is around 14 degrees in mine, and the blade is quite thin already at the start of the relief (0.44mm), so it is easy to go without a bevel+back bevel and sharpen at 15. You can however work with a microbevel at 20, quickly retouching between resharpenings.
