Review: I make a lot of smoked cheese--18 pounds at a time, several times a year. I cut 1-pound blocks of cheese into 1-ounce pieces. I tried a couple of wire slicers, & if the wire didn't break, it got slack in it to the point where it was useless. This knife is so simple, it's genius! I just wipe it down beforehand with a little olive oil to help keep the cheese from sticking. Repeat as necessary. It's not so sharp that I have to worry about cutting myself, & it does a brilliant job on cheese!

I make a lot of smoked cheese--18 pounds at a time, several times a year. I cut 1-pound blocks of cheese into 1-ounce pieces. I tried a couple of wire slicers, & if the wire didn't break, it got slack in it to the point where it was useless. This knife is so simple, it's genius! I just wipe it down beforehand with a little olive oil to help keep the cheese from sticking. Repeat as necessary. It's not so sharp that I have to worry about cutting myself, & it does a brilliant job on cheese!
