I use this method on the cheap plastic lids that come with most amber glass salve jars with glued on liners and it doesn’t leave any scrape marks on the plastic, so it definitely wouldn’t scratch up the stainless steel. The shape is great, especially for mixing things - deep enough to avoid splattering all over my kitchen. I also like them for using as a double boiler or placing over ice for things like whipping cream. Apparently they were originally made exclusively for Bed Bath Beyond, at least that’s what a hidden label indicates. The labels were not easy to remove. I used to have mixing bowls with a ring attached to the side. That made them easy to stabilize when beating things. I’m really glad I bought them.
