Now I can tell you that those ratios are so wrong I had a runny soupy mess. I had to grind up two big sleeves of crackers so it would thicken up to even roll them without crumbling. I don't know what genius wrote these instructions but it must of been a joke. I had to use both containers of matzo ball mix. Next time I'll trust my eyes and knowledge of cooking. Golf ball sized balls made with meal will expand in size 3 to 4 fold when you add them to the boiling water. Will keep about 4 days in refrigerator but can be frozen once you let them cool down a bit after cooking and then added back to soup to defrost at a later date.
