It's better and more flavourful than ginger powder (even fresh), and it really lends something to the recipes. Chopping my OWN crystallised ginger, though, is a heck of a chore. And very often, baker's cut chops are either too big or insanely expensive. These are a good, small, easy to measure out cut, and do not cost an arm and a leg.
