I collect wooden spoons, and I've worked as a professional chef for 30 years or so so I always have a wooden spoon in my box, but I've always tried to have one of these hanging up on the line that I can grab just in case. Rubber specials all tend to melt but this is the one that I always reach to if I'm if I'm into a serious pot of something. I had a couple of the longer ones that I accidentally left hanging on the line at my last job when I left, so despite the fact that I have 20 wooden spoons I still had to go and buy one of these to put back in my tool kit! One of the things that happened to me recently that really prompted it, was I was making a nice batch of risotto, and I always keep a wooden spoon in my toolbox to make risotto. But this time when I was almost done with the risotto, and it had a nice color perhaps it was roasted garlic, and it had interior garnish, but anyway I looked at the tip of my wooden spoon, and there was a little chunk missing!!!! Not a small chip, but it was a little bit bigger than a chip like the size of a small raisin. I freaked out because it was a big brazing pan of risotto, and I searched and searched and couldn't find it. I recently sanded all the tips of my wooden spoons and made sure that they were all clean and rounded correctly with no chips or cracks but I realized that I really couldn't take a chance like that again. I still have a nice collection of wooden spoons that I keep at home, but if you're serious, you have to add one of these to your kit. They're not very flexible they're nice and firm, so you'll have no problem really working that risotto, or that 24-in braising pan of beef for that Bolognese, or stirring that turkey hash or whatever you're making. I said some of these same specials in the kitchen for years and believe me they take a beating I've never seen one melt. Every 6 months or so just put a little bleach solution together with a little water and just soak it and it'll be almost like brand new. Review: The perfect spatula? I think it might just be! - I never considered what a perfect spatula might be before, but it's clear that the Matfer guys have. The utensil itself stirs nicely, it doesn't distort through heat, and yes, it does stain when using turmeric, but the staining disappears over time. Apart from not needing to oil it, and it not absorbing food gunk, there are two things that separate this from any other spatula I've come across: 1) it's flat at the just right place for you to scrape off sticky food at the edge of the pan. Of course, that may mean it will stick to the inside walls of the pan; so 2) it's outer edge is the perfect angle for scraping at the walls of the pan to dislodge stuck food. It means your pan and your spatula come out clean every time. It's also just thin enough to get into the corner of saucepans to prevent burning. Wooden spoons are not designed like that..
