All you have to do is add 1 cup each of fresh chopped green onions, cilantro and sliced shallots or onion of choice. No need to add lime or any other seasonings. 1 packet is enough for 1-1.5 lbs. of meat. It is pretty spicy if you add the whole packet so start out with half and add more to taste. I’m used to finding interesting spices, sauces, etc, to help me make my favorite restaurant dishes. So I’m not sure how I’ve been eating larb/namtok for almost 20 years in Chicago and never figured the recipe out - but now I have!!! Thanks to Lobo. The secret is definitely the rice powder, but there is so much more to this packet of seasoning that truly makes the dish. I highly recommend it - cook as directed and place your larb or namtok atop a bed of lettuce, cucumbers, shallots, green onions, cucumbers and plenty of fresh herbs like mint and cilantro. You’ll need to mix the spice packet with some fish sauce, lime, and water to create a “dressing” if you are trying to make your dish a true salad like it is served in restaurants. If you are like me and lucky enough to have some Vietnamese nuoc cham around, use that in lieu of fish sauce for extra umami in your dish.
