**Q: Can you use this in milkshakes?  Is it the same stuff,  or is the Carnation Brand the one to use?**
A: You can certainly use this in milkshakes.  Diastatic malt is malt that's been dehydrated (dried) by low heat, thus preserving the enzymes and  living nutrients that are available in sprouted malt.  When barley sprouts, it's nutritional  value goes up 600% and it's calories go down by 25% as work has been done. The best thing would be to sprout unhulled barley, drying it at in a low temperature dehydrator 140 degrees F. then grinding it in a grain grinder. That way you could have pure diastatic malt.  This is diastatic malted barley with the addition of wheat flour and dextrose (a sugar).  Carnation Malted Milk powder has WHEAT FLOUR AND MALTED BARLEY EXTRACTS, DRY WHOLE MILK, SALT, SODIUM BICARBONATE (according to Amazon.)  The Carnation product doesn't have any of the enzymes of barley malt as they've been killed by  the high temperatures in the extraction process.  The temperature of boiling to obtain the reduction of malt syrup would kill all the enzymes.  If you have no interest in malt enzymes and their health benefits, get the Carnation Malted Milk powders, either regular (tastes just of mait) or chocolate.

**Q: Can you freeze some of this. Will it still work. Thank you for your help.**
A: Yes, not only will it still work, it'll last a very long time. It's best to transfer it to smaller containers, though, and let them come to room temperature before opening when you use it. Otherwise moisture will tend to condense on the very cold powder, which will definitely shorten its useful life over time.

**Q: Does this have a shelf life?  While I use diastic malt powder by the teaspoon for bagels, 1.5 pounds is an awful lot of teaspoonfulls!**
A: I use it for bagels too. It's marked with a one year shelf life however it's in a well sealed container and in the past I've found this stuff is fine well past it's "best by" date if kept in the frig. Also use more than just a teaspoonful. I usually make 2lbs of bagels at a time and use a tablespoon for that.

**Q: Is this the kind of malt powder used in Malt o Meal hot cereal?**
A: No, it's the kind used for baking. The enzymes it contains help break down the starches in wheat flour, which allows yeast to assimilate them more readily.
