I only wish they made bigger dumplings and perogi. Trick too is make the dough thinner. Mine came and rocked a little. Cuts all the shapes and makes the pockets easily - but no matter WHAT you use, you still need to finger-crimp, to be safe. Hint - place first sheet of dough, fill pockets, and before you place the other sheet on top - LIGHTLY spritz with water, for a better seal. I tried using a pastry brush - but a light hand with the spritzer worked just fine. Line it with a piece of plastic film to get the perogies to fall out easier. Don't bother with flour.2. When joining the top and bottom dough sheets don't use a large rolling pin. That could push the filling out of place. Instead gently press down along the joints with your palm. When the shapes of the perogies start to appear roll just through the joints with a small cylindrical jar, such as a spice jar. Gradually increase the pressure until you are able to cut the joints. Pull away excess dough and turn out perogies onto a floured surface.
