I read the first year they might not grow as well as future growth. I planted mine late in the season, but they still grew to just under 5 feet and produced many tubers! I appreciate the nice packaging that helped to keep adequately moist for extended period without getting soggy or rotting. 2+ months later, planted on Mother's Day in May. I live in St Louis and waited until freeze seemed out of the question. A few nights are still in the 50s and high 40s, and they have tolerated it just fine. All 5 bulbs sprouted within 10 days, with multiple stalks per bulb. These seem easy to grow in a variety of conditions, and I look forward to seeing the flowers and the bulb yield. And how they taste! I have never eaten a sunchoke - just wanted a fun project and to try something new. I planted them in a large pot, because I have heard sunchoke spreads aggressively. I think the instructions said "full sun", but I quickly discovered it scorched in full sun, so moved it to where it only gets morning sun and sits in the shade of an oak during the hottest part of the day (I'm in Zone 7a at 38.6* latitude). It was definitely happier there and continued to grow. My remaining 4 plants grew amazingly all summer. I watered frequently, probably 3-4 times a week on average, and every day when it was hot. This fall, the squirrels have destroyed the stalks of all but 1 plant. I plan to attempt to harvest after first frost. I've got them in a pot in the house. I'll add a pic after the start growing. Lessons learned. Don't put them in the greenhouse, the heat will rot them Place them well out of reach of chickens, squirrels, and anything else that will steal them. My lone survivor is doing great.
