Unfortunately, when cutting the fat off the meat, that grease gets on everything and is PAINFUL to your throat if any of it gets on the meat. Other than washing the meat in DAWN soap I am not sure how to sufficiently clean the pork to get whatever that substance off of the pork. All I know is its 100% not eatable. The flavor is good, but not excellent. The size is small, it looks like it has been trimmed before curation. It has a fair amount of fat.
