If you follow instructions the juices when you unwrap will just flow out of the paper although not "steaming" and ruining the meat like aluminum foil at the end of the cook. Although already "smoked" prior to wrapping it allows for some additional smoke the last hour or two after wrapping. Great for briskets or roasts.
