The machine is NOT a refrigerator… so the ice will melt if you just leave it in there. So important to bag it as you go and freeze it. When I take the bag out of the freezer to add more ice, I break the ice up in the bag before I add more ice - generally just hitting the bag on the countertop does the trick. Then repeat as I add more ice. That keeps the nuggets of ice broken up. Using distilled water keeps minerals from building up in the machine. The ice is very soft and ice nuggets a perfect size. It will stop production once the basket is full (the machine goes silent). Once ice is taken out or the basket is emptied it resumes production. It's fairly well insulated but it's not a freezer so the ice will eventually melt if left alone. Since the top seals the unit, the flavor of the ice will not change - it just returns to its liquid state and refreezes. Odd flavoring comes from contaminants introduced to the ice/water or the unit not being cleaned. We clean ours every couple of weeks as directed and the ice still tastes great. **Q: How do you use the self cleaning mode on my mueller nugget ice maker model # NM-540. I received as a gift and do not have the instruction book?** A: Take the bucket out and you can put a small amount of white vinegar in the water well and add cool water to the max line. Then hold down the clean button and it will indicate with a light up that the cleaning process has begun. After it cycles put it by the sink or get a large pot and drain the water out using the tubs in the back. Lift up on the black connector for the tubes, you will be able to move them down to drain. The end of the tubes need to be lower than the machine. If you use vinegar, I would repeat the cleaning cycle with fresh water. It is best to use water that has been filtered, by refrigerator or a pitcher filer. **Q: In the morning the ice basket is empty & water tank full; "empty" light is flashing. Only if I open and close the lid does it start making ice.
