This a great product... I used putting it in the coffee bean grounder and add to my milkshakes... I feel the benefits... Honestly, I don't know how cook it, so next time I will be ordering a cooked version from amaranth. But after that, this product is rated for A-plus, in my opinion....

Perhaps not for everyone, but I find it quite tasty. Experiment with it. To prevent it from becoming a sticky glob try 1.5 cups water to 1/2 cup amaranth. Boil the water, then add the amaranth and stir. Simmer with a lid on. Stir every 5 minutes or so to prevent it from clumping. Do not overcook! About 20 min is as long as you want to cook it, remove the lid for the last 5 to 10 min. It is done before it looks done, remove it from the heat and put the lid back on. Don't cook it like rice or oatmeal, that is, until all the water is gone. This stuff is not going to fluff up. It cooks more like Buckwheat/Kasha, another pseudo-grain that will turn to a mushy, sticky mess if cooked too much. I've tried it with just salt, it tastes somewhat like a squash, a bit earthy and nutty. Marking porridge by adding some milk or half and half with fruit, Maple syrup, sugar, or better yet jams or jellies. It goes great with Lingonberry preserves. Guess it's all a matter of taste. Before tossing it out, experiment with it till you find something you like, or, at least don't hate.
