First job was to carve up a watermelon. It was so sharp its weight alone was cutting though the inside part of the melon. Next big job was carving up a 22 pound turkey, it was still sharp when done.I do have a sharpener system similar to Amazon’s “ RUIXIN PRO RX-009 Professional Knife Sharpener”. It restored the edge after a couple months of use from just sharp back to scary sharp again. I've never been one to notice how nice handles are, but the handle mixed with the best blade I've ever used, this takes the cake. Hands down best knife I own. Just buy it. It cuts through everything like soft butter and the handle is better than any knife I own. Plus, I think it might actually be damascus unlike all the others you can tell are lazered.
