Product description Our sourdough starters are "true" sourdough. They are made with organic flour and water only. They are leavened from the natural healthy bacteria in the flour and the environment. No yeast or leaving are added. Bakerdale was founded by a team of professional pastry chefs, bread bakers, and cooks. We work together with our combined expertise to bring you exciting new tools and products for your home or commercial kitchen, bakery, and pastry shop. How to use Bakerdale dehydrated organic sourdough starter Day 1 Please see note below on flour type. Place the content of the dehydrated starter packet in a small mixing bowl or dish. Add 10 grams of flour (about 1 tablespoon), and 10 ml (1 tablespoon) of lukewarm water. Stir with a spoon or spatula until well combined. Place in a glass cup or jar. Cover with plastic wrap. Poke a small hole in the plastic so the starter can breathe. Let the starter sit for about 24 hours. Day 2 Feed your starter with about 15 grams of flour and 15 ml of water (About 1 ½ tablespoon each). Mix well. Let it rest for about 24 hours. Day 3 By now, you should be able to see air bubbles in the starter and it may had started to rise. Give your starter another feeding of about 30 grams (about 1 ounce) of flour and 30 ml of water (about 1 fluid ounce). Day 4 Your starter should be visibly active. Keep feeding it equal amounts of flour and water each time it doubles in volume. The amount to add is that after the feeding the weight of the starter doubles of what it was before the feeding. If you end up with more than you need, discard some or use in other recipes. Your starter is ready to use when it doubles in volume in about 4 hours at room temperature. Use your starter in your dough when it has risen well but before it collapses. If it has already collapsed, give it another feeding and wait for it to rise again. Please note these instructions are for all Bakerdale dehydrated sourdough starters. The flour used should be the same of the variety you purchased. Use bread flour for the wheat starter. Whole wheat flour for the whole wheat starter. Rye flour for the rye starter, and spelt flour for the spelt starter. A fully developed starter. It is bubbly and active. If the starter is too liquidity, it may not rise in volume even if active. The air bubbles may float to the top and fizzle out into the environment. If your starter does not rise by day 4, increase slightly the ratio of flour to water when feeding. The thicker consistency will “support” the rise. Tips If you are new to baking sourdough bread, you should learn about the process before you begin. Consult a sourdough bread cookbook for reference. Your starter is a living organism. It must be fed regularly while active to keep it alive. The 2 most important factors are time and temperature. You want to use your starter when it is high in volume but before it collapses. Meeting your baking schedule To meet your available baking schedule, slow the rising by using cold water and/or letting it rise part of the time in the cooler, or hasten the process by using warm water and letting it rise in a warm area. **Q: How often do you need to feed it when it is being stored in the refrigerator?**
A: You should give it one feeding the night before you want to bake. If it rises vigorously, then it can be used the next morning in the end bread dough.
If it did not double in volume, then the sour should be given a second feeding. You should wait until it doubles in volume and then use it in your dough recipe.

**Q: Would this work with Einhorn flour which is very high in protein?**
A: Yes it will but maybe won’t get as much rise when baking, denser loaf. Like barley flour.

**Q: is this organic, non gmo?**
A: A brand new batch was started from scratch December, 2023. Only Organic, non GMO flour is now used.

Fist off I am skeptical of buying starters in a package because I have been having so much trouble doing it myself. So I just got this and followed the instructions to a tee "Day-1" Added the packet, the correct amount of water and rye flour. Well, it's starting off poorly as the mix was a blob the consistency of cement when mixed! I will see tomorrow when feeding it again will do any better but I doubt it! I live at 5200 ft in Colorado and it can get very dry so I added a bit more water on Day -2. At Day 5 It fianlly showed bubbles and activity. This really works but you have to be paitient. Now it begs for a feeding every day as it alway's rises nearly double or 2-1/2 times. Great stuff!! Note: using sourdough starter is tricky at a mile high. There is as much pressure to offer during the rising phase by using straight starter, so you have to add some active yeast to the flour before adding the levan.. I also use a higher oven temp like 500 degrees.

This dried starter produced great smelling and rising sourdough almost from the beginning. Just a few days initial feeding needed, since then always rises great, smells great, even if I forget feeding on one day. Just baked my first 100% whole rye bread with the new starter, and it is absolutely delicious. Fully recommend.

### ⭐ Didn't work, most likely DOA Dead On Arrival

Followed the instructions, absolutely no growth, done similar with actual live yeast before, it's not that hard, but this powdered stuff seems to be DOA for me. Maybe a bad batch, who knows? Waste of time and money. Hopefully others have better luck.
