I’m also someone who enjoys cooking gourmet foods that regularly have beer or wine in them. I’ve learned a great trick for wine, and this will now be part of my arsenal for anything requiring beer. I recommend replacing the same amount of liquid in the recipe, and here is how I prepare one cup of it. 1 cup of beef broth, 1/4 tsp of the barley malt syrup, and 1 tablespoon of your favorite vinegar. Mix well and add to the recipe. Sure, you can just add the broth, but it can sometimes leave the meal tasting flat. I tried this method in my instant pot where I made a shredded beef for tacos with ancho chili powder as the predominant flavor. It turned out great.
