It cuts nice thin slices depending on the amount of pressure you apply when you cut. A light pressure using long cuts of the blade gives a wafer thin slice add a little more pressure and the thickness gets more. The knife most of all is safe and you cannot cut your self when using it. I feel confident enough to let my kids cut from the Serrano. As with anything it requires some practice to use but I have found I am improving and learning how to use it effectively. Some reviews have said it is hard to sharpen, once you slip off the guide/protector I sharpened it with a 'steel' with ease and achieved a nice sharp blade. The tip of the blade is squared off (slightly rounded) and fits neatly into the protective sheath/guide. Once sharpened though...it is an excellent knife for the money, its a pity because it should be sharp when it arrives but I would still buy this knife again because its good quality.
