Q: Will it work upside down?

It should, but the buttons on the remote would be reversed. If you pushed the left pan button the camera would pan right

Q: Can the head be permanently plugged into power and will it stay awake, looking to mount on perch 20 ft off ground.

It runs on a lithium battery. I haven't tried running it while it is plugged in. Just know you are not able to program it to pan or tilt on a timer. If you are not pushing the button to make it pan or tilt it will remain stationery.

Q: Does it have a built-in spirit level?

I don't know what you mean by spirit level but it has 9 different speeds for pan and tilt. You can hear a little humming noise from the motor when recording.
