A Whole New Coffee Concept Specialty Coffee To be graded specialty coffee, arabica beans need to score at least 80 points on a 100-point scale with objective quality standards. A quality burr grinder ensures an even grind and therefore a good extraction. Try to grind your coffee just prior to brewing and grind only the amount you need. Coffee preserves freshness for longer as whole bean than as ground. Weighting To use the right coffee-to-water ratio is key, so it pays off to invest in a good digital scale to measure by weight. Depending on the coffee brewing method, we suggest a coffee-to-water ratio between 1:13 and 1:17. Don't know why, I think Jamaican blue is so un-bitter it gets a bit lost with milk. So if your drink is a latte maybe try one of their other ones.
